could I put this in a mini loaf pan or would the recipe need be adjusted do you think? Baking for my co-workers for Christmas and I’ve been trying to find a healthier banana bread recipe.

I wonder if it would be lighter and fluffier if you separated the eggs, whisked the whites into soft peaks then folded this into the mixture (having already stirred in the yolks to the mixture, obvs)? I will try it!

I made this and it was super yummy but it didn’t rise like what your picture shows. Any ideas why this would be? It was more a dense cake and not fluffy at all
