Banana & Blueberry Sweet Omelette with Greek Yoghurt (I'm Obsessed) - The Urban Ecolife

I think I have a problem. I’m obsessed with the humble sweet omelette (aka ‘Omelet’ in Americano talk). Whether it be sweet, like this one, or savory, like this one, I don’t really care. I just want my eggs and I want them in omelette form… stat!

 

So considering that it’s possibly one of my most favourite food creations out there at the moment, I decided to create a video of how exactly you can whip one of these little beauties up as well, the sweet kind that is. There really isn’t that much to it but with my new found love for the camera, I thought it’d be fun! Not to mention, I get to eat the deliciousness afterwards.

I’ve gone dehydrator crazy which explains why I’ve got some dehydrated apple and banana chips coming your way! That thing has been working overtime and I have Vivica from The Nourished Caveman to thank. You see, I’m bunking at her place for a wee bit and ever since we made her Golden Flax Crackers in the dehydrator (recipe video coming soon!), I’ve been having a wild time. Like a real hoot. All the ducks are going quackers with me. Maybe the solitude is starting to get me? I do have only the company of animals right now. The crazy cat lady inside me is being exposed. Wow. I never thought I’d see the day.

An impromptu visit from a dear old friend left me in quite the quandary. With her arrival set for the 2 hour mark, it was only at this point in time that I remembered (thanks to Facebook) her looming birthday. Seriously, what kind of friend was I? A forgetful one at that. So here I was. In a panicky rush, trying to muster up the brainpower and creative prowess to come up with a birthday cake recipe. An easy task? THINK AGAIN. I had limited ingredients and ducking down the supermarket was a half hour drive. Not happening. It was like Iron Chef, except the amateur was pitted against only what her creativity and pantry limited her too.

I’ve recently had to get over this weird thought of smoothies not being a proper ‘meal’. I think it’s because I really enjoy the process of chewing my food that it predisposes me to not enjoying the process of drinking my meals. Strange? Maybe. Please tell me I’m not alone.

 

Whilst I may have a slight addiction to my morning eggs, I put the challenge to myself to give this smoothie thing a proper go. Especially since this whole smoothie craze seems to be sweeping the planet from under it’s rooted tree trunks.

I have fond memories of my trip through Japan 2 years ago. A big fat, ginormous part of this was eating up all things flavoured with Green Tea. I’m not talking just ordinary, your old run of the mill green tea either. The real Matcha Powder kind. I have a fascination with this peculiar Matcha powder. Is it its wicked green colour?  The unusual flavour? Its supposed nutritional benefits? Or its multipurpose ability to be added to basically anything you fancy baking or making? So I have a confession to make. I don’t just eat this with Indian curries. Supposedly that’s what mango chutney is served with? There are no rules in my kitchen though.
